Best Ever ‘Raw Earth Cake’

Here it is, my best ever Raw Earth Cake infused with Orchard St Radiance Elixir Powder.

A perfectly blended, lightly crunchy base, buttery smooth and nourishing filling topped with a rich and velvety cacao icing.

This heavenly creation features macadamias, cacao, coconut and a divine blend of radiance enhancing herbs. The best part is that you can add or remove any ingredients as you wish — you truly can’t go wrong with this one.

Natural, organic and nourishing this earth cake is one of my most loved creations.


Ingredients

I have used all organic ingredients and encourage you to source as much as you can as well, however I know that it’s not always accessible so don’t worry if that option isn’t available — this recipe will still turn out delicious, no matter what you’re working with.
To expand on the interchangeable ingredients I mentioned earlier, feel free to swap out the macadamias for your preferred choice of nuts (cashews, almonds or hazelnuts also work a treat). You can also add in other herbs or superfoods of your liking.

Base:
1 cup - Macadamias (or nuts of choice)
1 cup - Dates (approximately 9)
1/3 cup - Buckwheat kernels
1/4 cup - Coconut flakes
1/4 cup- Cacao nibs
1 tbsp - Cacao powder
1 tsp - Maca powder


Filling:
2 cans - Coconut cream (cream only)
1 heaped tbsp - Cacao powder
2 heaped tbsp - Coconut sugar
2 heaped tsp - Orchard St Radiance Elixir Powder
1 handful of Macadamias (optional)


Topping:
3 heaped tbsp - Coconut oil
2 heaped tbsp - Cacao powder
2 tbsp - Maple syrup
1 tsp - Orchard St Radiance Elixir Powder

Method

Base:
Place all of the base ingredients into a food processor and blitz until the mixture is combined and able to stick together when pressed. If you prefer less crunch, keep blitzing until your desired consisttency is reached. Press the mixture into a lined pie dish or tray, spreading evenly to create a firm base, then place in the freezer to chill whilst the filling is prepared.


Filling:
Place all of the filling ingredients into the food processor and blend until the mixture is combined. To ensure a smooth, creamy filling use only the cream component of the canned coconut cream. Once blended, pour the filling over the chilled base and place it back in the freezer to set.


Topping:
Gently heat a pot of simmering water on the stove, place a bowl over the top and add the coconut oil to slowly melt it. Mix in the cacao powder and maple syrup and stir until the mixture is combined to a smooth and thin consistency then remove from the heat and let it cool slightly.
*Reminder — keep the heat low on this step to preserve nutrients and avoid any burning.
After a couple of minutes the icing should be slightly cooler to pour over the top of the chilled filling. Spread it evenly to create a smooth top layer (you will want to do this step fairly quickly as the icing will begin to set rapidly once it’s poured on the chilled surface).
This raw cake speaks for itself but if you want to jazz it up, you can adorn it with dried calendula flowers like I have here, or sprinkle rose petals, bee pollen or extra cacao on top before placing back in the freezer to continue setting.
Leave it to set in the freezer for several hours, ideally overnight, before serving.
Prior to serving, remove it from the freezer to defrost slightly in room temperature.
